Salmon Salad Medley
Chunks of salmon are tossed with leafy greens, fresh fruits, feta cheese, nuts and raspberry vinaigrette to make this
main dish salad.
Ingredients:
4 cups assorted salad greens--romaine, iceberg and/or
spinach
12 oz salmon fillet
1 nectarine or peach
1 cup strawberries
1/2 cup blueberries or blackberries
1 cup crumbled feta cheese
1/2 cup sugared nuts (can substitute natural nuts for a lower-cal verson)1/2 cup raspberry vinaigrette
Directions:
Grill or bake salmon fillet; cool. Cut into bite-size pieces, removing
any skin and bones. Place greens in salad bowl. Chop whatever seasonal fruit you choose (such as those listed) into bite-sized pieces. Add
fruit, salmon and feta cheese to greens; toss lightly. Add raspberry vinaigrette and toss to coat. Top with chopped nuts.
Notes:
Salmon can be cooked ahead of time. Many other seasonal fruits work
well in this salad, including raspberries, mango and kiwi. Provide additional vinaigrette at the table.
